Mulligatawny Soup

This is really not a soup I would normally even try, but of course after the "Seinfeld" soup nazi episodes I just had to find out what Mulligatawny Soup is. This I actually found online and it said it's a copycat recipe for the "Soup Nazi" on "Seinfeld". I will probably make this about once a year. It's actually delicious, just more "strange" to us with apples and raisins in our soup!!!

2 tablespoons butter or margarine

2 stalks celery, about 3/4 cup (finely chopped)

1/2 cup onion, finely chopped

1 carrot, about 1/2 cup, finely chopped

2 tablespoons flour

2 teaspoons curry powder

4 cups chicken broth

1 bay leaf

1/2 cup raisins

1/4 cup apple, finely chopped

1/2 teaspoon shredded lemon peel

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon dried thyme, crushed

1/2 cup rice, cooked

1/2 cup chicken, cooked and chopped

1/2 cup milk or light cream

In about a 3 quart saucepan, melt the butter or margarine.  Add the celery, onion, and carrot.  Cook until tender, but not brown.  Stir in the flour and curry powder.  Cook a minute or two.  Add the chicken broth, bay leaf, raisins, apple, lemon peel, salt, pepper, and thyme.  Simmer for 15 minutes.  Add the rice and chicken.  Heat through.  Just before serving, stir in the milk or light cream.  If you want to make this soup ahead, freeze it without the milk or cream.  Then, to serve, heat and stir in the milk or cream.  Makes 6 servings.  Makes 6 servings, about 1 cup each.
