Plantation Bars-Joyce Z.

1/4 cup margarine

1/2 cup sugar

1 egg

1/2 cup molasses

1/2 cup milk

2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

1 1/2 cups raisins or cut up dates

1 cup chopped nuts

Lemon Glaze (below)

Heat oven to 350 degrees. Mix margarine, sugar, egg and molasses thoroughly. Stir in milk. Blend dry ingredients; add to milk mixture. Stir in raisins and nuts. Spread in greased 9X13 inch pan. Bake 25 to 30 minutes or when toothpicks stuck in center comes out clean. When cool, spread with glaze. Cut in bars. Makes 4 dozen.

Lemon Glaze: Melt 2/3 cup butter. Blend in 2 cups convectioners sugar and 1/2 teaspoon grated lemon peel. Stir in 2 to 4 tablespoons lemon juice until icing spreads smoothly.
