Granola Crunch Bars - Amy

2 cups oatmeal

¾ C wheat germ

1 cup sunflower seeds

¾ cup nuts

½ cup brown sugar

½ cup honey

3 tbsp. applesauce

2 tsp. vanilla or almond extract

½ tsp. salt

8 oz. dried fruit (raisins, craisins, apple, mango etc.

Mix oats, wheat germ, sunflower and nuts. Pour on large cookie sheet with sides on it, or baking dish.  Toast in oven at 400 for 10-12 minutes.

Line casserlole dish with wax paper, go up sides, plus leave extra room to fold over the top.  Spray wax paper lightly.
In saucepan simmer brown sugar, honey and applesauce, vanilla and salt.  Stir constantly until it comes to a heavy boil…1 minute.
Pour over dry mixture.  This will be very thick and it seems like there isn’t enough liquid, but keep stirring until everything is moistened.  Spread on top of waxed paper in 11x13 pan. Fold the extra wax paper on top and press firmly all over.  Let cool and cut into bars.
