Rhubarb Crunch-IreneMix:
1 cup oatmeal
1 cup brown sugar
1 cup flour
Melt 1/2 cup butter or margarine and add to above mixture. Put 2/3 of this mixture in the bottom of a 9x9 inch pan. Cut up 4 cups rhubarb and put on top.
Cook:
1 cup sugar
1 cup boiling water
1 tablespoon cornstarch
Stir until it starts to thicken. Add 1 teaspoon vanilla; pour over rhubarb. Put rest of oatmeal mixture on top. Bake 1 hour at 350 degrees. You can also use strawberries, cherries, raspbarry or apples in place of rhubarb. Top with ice cream or Cool Whip when you serve, if desired.
