Beef Brisket - Amy

3/4 c. brown sugar

3/4 cup chile  sauce

3/4 cup ketchup

1 envelope dried onion soup mix

1 (12 oz) bottle of beer

15 small red potatoes

1 1/2 lb. carrots

3-4 lb. beef brisket

Preheat oven to 325/  Stir together the first 4 ingredients, stir in beer. Place brisket, fat side up, in a large roasting pan.  Arrange potatoes and carrots evenly around meat.  Pour beer mixture over meat, carrots and potatoes. Bake uncovered at 325 for 3 1/2 hours basting occasionally with sauce. Remove brisket from oven and let stand uncovered for 20 minutes.  Remove brisket from the pan and cut into slices.  Return slices to the pan with potatoes and carrots.  Bake again, covered for 30 minutes or until tender.  Great company dish!
