Zucchini Muffins-Peggy

1 cup oat bran baking mix

1 slightly beaten egg white

3 tablespoons water

1 tablespoon cooking oil

1 tablespoon honey

1/2 teaspoon pumpkin pie spice

1/2 cup shredded zucchini

In a large mixing bowl, stir in baking mix. Stir together egg white, water, cooking oil, honey and pumpkin pie spice. Add egg white mixture to the baking mix all at once. Mix just until moistened. Fold in zucchini. Line 4 muffin cups with paper bake cups, or spray with nonstick spray coating. Spoon batter into muffin cups. Bake at 350 degrees.
