Nutmeg Coffeecake-Peggy

3/4 mixed, dried fruit bits or raisins

2/3 cup skim milk

2 cups oat bran baking mix

1 teaspoon finely shredded orange peel

1/4 teaspoon ground nutmeg

2 slightly beaten egg whites

1/4 cup cooking oil

2 tablespoons honey

1/2 cup powdered sugar

1/4 teaspoon finely shredded orange peel

2 to 3 teaspoons orange juice

Spray an 8X8 inch baking pan with nonstick coating. Set aside. In a small bowl, combine dried fruit and milk. Let stand for 10 minutes. Meanwhile, in a medium mixing bowl, stir together baking mix, orange peel and nutmeg. In a large bowl, mix egg whites, oil, and the fruit mixture. Stir baking mix mixture into egg white mixture. Pour batter into pan. Bake in a 350 degree oven 30 to 35 minutes, or until a wooden toothpick inserted in center comes out clean. Cool on rack for 10 minutes. In a mixing bowl, stir together powdered sugar, orange peel and 2 teaspoons orange juice. Stir until smooth. Add additional orange juice to make a glaze of drizzling consistency. Drizzle over and serve warm. Serves 9.
