Carrot Cake-Joyce C.

Mix:

2 cups sugar

4 eggs

1 1/4 cups salad oil

Add:

2 cups flour

2 teaspoons cinnamon

4 cups grated carrots

2 teaspoons baking soda

1/2 tespoon salt

1 cup chopped nuts

Bake at 350 degrees for 50 minutes. Use a 9x13 inch pan or 2 round pans. Grease and flour pans.

ICING:

3 ounces cream cheese

1 pound powdered sugar

1 stick oleo

1 teaspoon vanilla
