Date Sweetened Chocolate CupCake/Muffin (Family Recipe) - Julie

No sugar, eggs and I use certified gluten free oats.

35 pitted dates

5 tablespoons unsweetened cocoa (may use vegan cocoa powder)

1/2 cup oil

2 teaspoons vanilla

1/4 teaspoon salt

2 teaspoons baking soda

1/2 teaspoon baking powder

1 1/4 cups milk (may substitute rice milk, if vegan)

6 tablespoons water

2 cups oat flour (I use certified gluten free oats

Preheat oven to 325 degrees. In a blender - add all ingredients EXCEPT the oat flour - blend until smooth. (may add more water, if needed as this is a very thick mixture) Add in oat flour in small amounts until blended in.
For mini cupcake - bake 24-26 minutes (makes approximately 24)
For standard cupcake - 30-32 minutes (makes approximately 12)
