Freezer Strawberry Jam-Earlene

Send Uncle Harold out to Walvoord's Berry Farm to pick lots of juicy red strawberries!

Hint: Wash, scald and drain glass or plastic containers of 1 pint size or less. I use pint jars. Use fully ripe strawberries. Do not reduce sugar and do not double recipes. Crush small amounts of fruit at a time with a potato masher.

1 quart fully-ripe strawberries, completely crush, 1 layer at a time

Add 4 cups sugar to the crushed berries, stir in sugar and let stand for 10 minutes.

In saucepan, mix 3/4 cup water and 1 box of Sure-Jell. Bring this mixture to a full boil. Boil for 1 minute, stirring constantly. Add Sure-Jell mixture to 2 cups of the strawberry sugar mixture. Continue stirring for 3 minutes. Ladle into prepared pint jars. Cover with lids. Set at room temperature for 24 hours. Store in your deep freeze. use as jam or ice cream topping. It's yummy!
