Chicken Oriental-Jayne

4 chicken breasts, boned and cubed

1 (6oz.) can water chestnuts, drained and sliced

1 (8oz.) container fresh mushrooms

1 zucchini, thinly sliced

1/2 cup chopped onion

1/2 cup chopped cashews

1 packet stir-fry seasoning mix, follow packet instructions

3 tablespoons vegetable oil

Pour oil into wok and preheat, uncovered, at high for 3 to 4 minutes. Add onion; stir-fry 1 minute. Push up the side. Add chicken and stir-fry 5 minutes. Push up the side. Add mushrooms and water chestnuts, stir-fry until mushrooms become tender, about 3 minutes. Push up the side. Add zucchini, stir-fry 2 minutes. Push up side. Blend everything together and add cashews. Turn on low and put mixture over rice, we like to put soy sauce over top.

VARIATIONS: Can add bamboo shoots, cucumber, red peppers, celery, shrimp and pea pods.
