Creamed Chicken and Biscuits -Rachel

2 cups chicken, chopped 

1 medium onion, chopped

1 1/2 teaspoons butter or margarine

1 can cream of chicken soup

1 cup sour cream

1/2 cup milk

1/2 cup chopped pimentos

1 cup shredded cheddar cheese (divided)

6 refrigerator biscuits

Preheat oven to 350 degrees.  Saute onion in butter or margarine until tender.  In medium bowl, combine onion, chicken soup, sour cream, milk and pimentos.  Mix well and pour into a 11x7 inch baking pan.  Bake for 20 minutes.  Cover with 3/4 cup cheese.  Place biscuits about 2 inches apart on chicken mixture and top with remaining 1/4 cup cheese.  Bake 20 minutes more until nicely browned.
