Ham and Potato Scallop-Lorraine
5 thinly sliced potatoes
1 slice cubed, ready to eat type ham
1 can condensed cream of mushroom soup
1/4 cup milk
1/4 cup chopped green pepper
1/2 teaspoon salt
Dash of pepper
Butter or margarine
1/2 cup chopped onion
Place potatoes in greased 2 quart casserole. Cut ham in serving pieces and bury in potatoes. Combine soup, milk, onion, green pepper and seasonings; pour over potatoes. Dot top with butter or margarine. Cover and bake at 350 degrees for 1 hour. Remove cover and bake 45 minutes longer, or until potatoes are done. Trim with parsley. I sometimes microwave this, goes a lot faster.
