Jambalaya-Brenda

2 tablespoons butter

1 medium onion

1 cup bell pepper, chopped green, yellow and red

2 cloves garlic, minced

1 pound smoked sausage, cut into 1/4 inch slices

1 cup rice

2 cups chicken broth

3 tablespoons Tabasco green pepper sauce

1 (14 1/2oz) can diced tomatoes, drained

Cajun seasoning, optional

Melt butter in skillet over medium heat. Add onion, bell pepper, garlic, and smoked sausage and cook for 5 minutes. Stir in rice, chicken broth, Tabasco sauce, tomatoes and bring to boil. Reduce heat, cover and simmer 25 minutes. Remove from heat and let sit 5 minutes longer. Makes 6 servings.
