Pan Burritos-Becky

2 packges ( 1 1/2 oz. each) enchilada sauce mix

3 cups water

1 (12oz.) can tomato paste

1 garlic clove, minced

1/4 teaspoon pepper

Salt, to taste

2 pounds ground beef

9 large (9inch) flour tortillas

4 cups (16oz.) shredded Cheddar or taco cheese

1 (16oz.) can refried beans, warmed

Taco Sauce (optional)

Sour cream (optional)

Chili peppers (optional)

Chopped onion (optional)

Guacamole (optional)

In a saucepan, combine the first 6 ingredients; simmer for 15 to 20 minutes. In a skillet, brown the beef. Drain; stir in 1/3 of the sauce. Spread another 1/3 in a 9X13 inch pan. Place 3 tortillas over sauce, tearing to fit bottom. Spoon half meat mixture over tortillas; sprinkle with 1 1/2 cups cheese. Add 3 more tortillas. Spread refried beans over tortillas; top with remaining meat. Sprinkle with 1 1/2 cups cheese. Layer remaining tortillas; top with remaining sauce. Sprinkle with remaining cheese. Bake uncovered, at 350 degrees for 35 to 40 minutes. Let stand 10 minutes before cutting. Serve with taco sauce, sour cream, chili peppers, chopped onion and/or guacomole if desired. Makes 8 to 10 servings.
