Cream Puffs-Becky

Heat to boiling in saucepan:

1 cup water

1/2 cup butter or margarine

Stir in 1 cup flour, stirring constantly until mixture leaves the pan and forms into a ball. Remove from heat; cool. Beat in 4 eggs, one at a time until smooth and velvety. Drop in 8 mounds onto ungreased cookie sheet. Bake in 400 degree oven for 45 to 50 minutes until browned.

FILLING:

2/3 cup sugar

1/2 teaspoon salt

1/4 cup cornstarch

Put sugar, salt and cornstarch in medium saucepan. Gradually add 3 cups milk. Cook over moderate heat, stirring constantly until mixture thickens and boils. Boil 1 minute. Remove from heat. Take out about 1/4 cup and put in small bowl and mix with 3 egg yolks; stir well. Add this mixture back into rest of filling. Return to heat and boil, stirring constantly for 2 more minutes. Remove from heat and mix in 1 tablespoon margarine and 1 1/2 teaspoons vanilla. Cut tops off cream puffs and fill. Can add 1 tablespoon strawberry jam if desired. Put top back on and sprinkle with powdered sugar. A family specialty!!!
