Beat until stiff (holds a point)
6 egg whites (3/4 cup)

Gradually beat in half (1 cup) of 2 cups sugar

Beat in a little add a time (adding alternately with the remaining sugar
1 1/2 teaspoon lemon juice or vinegar

Beat until very stiff and glossy. For tinted meringes, add a few drops of food coloring.

Drop by small spoonfuls on brown paper on baking sheet. Spread with spoon to make circle with indentation in the middle. Bake 40 minutes at 275 degrees until delicately browned and crusty. Cool. Remove from pan. Serve filled with ice cream and topped with chocolate syrup, or fruit. (Slice and mash fruit a little with sugar to taste) Strawberries are a favorite.
