Banana, Coconut or Vanilla Cream Pie-Becky

VANILLA CREAM PIE FILLING:

Mix in saucepan:

2/3 cup sugar

1/2 teaspoon salt

1/3 cup cornstarch

Stir in gradually: 3 cups milk. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil 2 minutes. Take out about 1/4 cup, put in small bowl and mix with 3 egg yolks; stir well. then add this back to the rest. This will prevent egg from curdling. Return to heat and boil 2 minutes more. Stirring constantly. Remove from heat. Blend in 1 tablespoon butter or margarine and 1 1/2 teaspoons vanilla. Cool. Pour in baked pie shell.

BANANA CREAM PIE:

Follow above recipe. Slice 3 bananas over bottom of baked pie shell before adding filling. Top with meringue.

COCONUT CREAM PIE:

Follow above recipe. Add 3/4 cup coconut afer vanilla. Top with meringue. Sprinkle meringue with coconut before baking.

MERINGUE:

Beat 3 eggs whites and 1/4 teaspoon cream of tartar until stiff. Gradually beat in 6 tablespoons sugar, a little at a time. Continue beating until stiff and glossy. Pile meringue over whole pie, swirl to points with bottom of spoon. Bake at 400 degrees for 8 to 10 minutes until delicately browned.
