Light 'n Fruity Pie-Kathy

1 (3oz) package Jello, any flavor

2/3 cup boiling water

2 cups ice cubes

3 1/2 cups or 1 (8oz) container Cool Whip

1 (8"or9") baked graham cracker crumb crust, recipe here.

Completely dissolve gelatin in boiling water, stirring 3 minutes. Add ice cubes and stir constantly until Jello is thickened, about 2 to 3 minutes. Remove any unmelted ice. Using wire whip, blend in Cool Whip, then whip until smooth. Chill until mixture will mound. Spoon into pie crust. Chill 2 to 3 hours. Garnish with fruit, if desired.
