Mellow Mincemeat Pie-Becky

1 package instant vanilla pudding

1 small container Cool Whip

1/2 cup sour cream

1 cup mincemeat

1 baked pie shell

Make pudding, reducing liquid by half. Gently stir in remaining ingredients and pour into baked pie shell. Refrigerate to firm. Serve with a dollop of Cool Whip.
