Pumpkin Pie-Joyce Z.

9" pastry shell

2 eggs

1 (16oz) can pumpkin (2cups)

3/4 cup sugar

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon cloves

1 2/3 cups evaporated milk

Heat oven to 425 degrees. Prepare pastry. Beat eggs slightly with hand beater; beat in remaining ingredients. Place pastry-lined pie plate on oven rack; pour in filling. Bake 15 minutes. Reduce oven temperature to 350 degrees. Bake until knife inserted in center comes out clean, about 45 minutes longer. Cool. Serve with whipped cream, if desired.
