1/3 cup lard or shortening

1 cup flour

1/2 teaspoon salt

2-3 tablespoons cold water

Cut shortening into flour and salt until particles are the size of small peas. Sprinkle with water, 1 tablespoon at a time. Roll out dough. Fill with pie filling or bake at 475 degrees for 8 to 10 minutes. Double for 2 crust pie. Note: Since making this recipe of my Mom's for years, I found that mixing flour and shortening in food processor for several pulses, then add water and pulse until dough forms ball. Roll out or bake. This makes a really nice balanced crust. Double for two crust pie.

UPDATE: Put shortening, flour and salt in food processor, pulse just until crumbly. Add water a little at a time and pulse until dough forms a ball. Roll out and bake. Makes a very light flakey crust.
