Chicken Pierre - Becky

2 chicken breasts

Coat chicken breast lightly with mix of flour, salt and pepper.

Melt 1 tablespoon butter in large skillet and brown chicken on both sides. Remove from pan.

Combine in skillet:

1 - 14.5 ounce can diced tomatoes

1/2 cup water

2 tablespoons brown sugar

2 tablespoons vinegar

2 tablespoons Worcestershire sauce

1 teaspoon salt

1/2 teaspoon Chinese Five Spice (I use Penzey's "Tsardust" seasoning mix)

Bring to boil. Reduce heat and return chicken to pan. Cover and simmer until juices run clear, about 30-35 minutes. Serve chicken covered with tomato mix. Makes 2 servings, can easily be doubled.
