Orange Mint Chicken-Peggy

2 whole medium chicken breasts, about 1 1/2 pounds skinned and halved lengthwise

Salt and pepper (optional)

1 tablespoon lemon juice

1/3 cup orange marmalade

1/2 teaspoon dried mint, crushed

Rinse chicken; pat dry. Place chicken, bone side up, on the unheated rack of a broiler pan. Season with salt and pepper, if desired. Broil 4 to 5 minutes. Meanwhile, for glaze, in a small saucepan, combine marmalade, juice and mint. Cook and stir over low heat until well blended. Brush some of the glaze over bone side of chicken; turn chicken over. Continue broiling for 10 to 15 minutes, or until tender and no longer pink, brushing with glaze several times during the last few minutes. Serve any remaining glaze over chicken.
