Beer Batter-Kathy

(Fish or Fowl)

1 egg

Beat well with mixer.

Add:

1 cup beer

1 teaspoon salt

1 teaspoon sugar

1 teaspoon baking powder

1 scant cup flour

Batter is quite runny. It is right consistency when batter clings to spoon. Dip pieces and fry in deep fat. Especially good on smelt.

Another way for smelt: Beat 1 egg with 1/2 cup milk or water. Dip smelt in mixture and roll in Frying Magic and pan fry. I usually use Crisco or butter, prefer margarine.
Frying Magic is in blue box in any grocery store, doesn't need any further seasoning. Sometimes I just moisten smelt with water, then roll in Frying Magic and fry.
