Cream of Broccoli Soup-Jayne

4 tablespoons butter

Melt in saucepan and add 4 tablespoons of flour and thicken; cool.

1 bunch broccoli

1 small onion, chopped fine

2 tablespoons butter

1/2 cup heavy cream or half & half, can use milk

1 quart chicken stock or broth

Salt and pepper

Saute' onion in butter and add broccoli. Cut broccoli in 1/2 inch pieces. Cover and cook 3 minutes. Add chicken stock and bring to a boil. Stir a little stock into flour mixture, and then add to soup and cook for about 30 minutes. Blend cream into soup and serve. Can use cauliflower or asparagus.
