Simple Chicken Noodle Soup with Dumplings-Arlene

Prepare ahead

1 medium chicken breast. I bake several chicken breasts ahead. They can be frozen and used in chicken casserole also.

Dumplings

1 cup flour

1/4 teaspoon salt

1/4 teaspoon baking soda

1 egg

1 tablespoon sour cream

1 tablespoon butter or oleo

Add butter egg, sour cream and salt. Add flour and baking soda. If needed add some milk to make consistency of mashed potatoes. Do not over mix or dumplings will be tough.

Now start soup

1 package Bear Creek chicken noodle mix

2 cups wide noodles

1-2 cans chicken broth

Salt and pepper, to taste

Prepare chicken noodle mix as directed on package. When mixing in soup mix add noodles and whisk together. Cook as directed and when almost done I add the dumplings. Pinch off small pieces dumpling mixture. Continue to cook until dumplings are done. At this time I also add chicken broth depending on how thick you want the soup. Salt and pepper to taste. You may think this is long, but it is easy. The dumplings are easy and it is quick and good!
