Stuffed Baked Potatoes-Joyce Z.

4 large baking potatoes

1/4 cup melted butter or oleo

Hot milk

2 slightly beaten egg yolks

Salt and pepper, to taste

Scrub potatoes. Rub skins with fat. Bake in hot oven at 425 degrees for 45 to 60 minutes or microwave 10 to 15 minutes (according to your microwave). When soft, cut potatoes in half lengthwise and scoop out inside. Mash. Add butter and enough hot milk to beat light. Add yolks and beat until fluffy. Season to taste. Pile lightly into shells. Rebake until top is lightly golden.
